I love Eierkuchen (egg panncakes), crapes, Kartoffelpuffer (potato pancakes) and no visit to Germany would ever be complete without Doener (Turkish gyros). I would recommend a day trip to Braunschweig if you have time. My favorite cty, and it is a half hour from Hanover. German asparagus is the best, but it is out of season. I read in my sausage making book about how some german sausages are made with milk rather than water or wine -- I wonder if that's what gives some sausages their white color?
