I am always happy to meet another beet lover. Do you have any favorite preparations? one I like to make often is beet stacks with ricotta and orange slices (beet slice, orange slice, ricotta, repeat...) Also happy to have discovered your blog because I think I'll learn alot from it. Gravlax? Limencello? BACON GREASE PIE CRUST? Oh yes, I'll be exploring for awhile. I have made a few other things in it, and all have turned out wonderfully. Also, I love your site (and the musical pairings)! I look forward to reading more! I find that beets need little beyond a good roast to bring out their flavor. The fact that you note that that these beets come out 'slightly pickled' is definitely a selling point for me. :) I have been meaning to pick up a copy of David’s book. Have you tried the prunes in beaujolais? They are delicious over vanilla ice cream Kelly -- definitely. This is one of the reasons I like CSAs too -- at the farmer's market there are SO MANY CHOICES, and a CSA makes life a little easier by making the choices for me :) Amanda -- thanks for commenting! I used to live on a road that was absolutely thick with elderberry trees (I even had one right outside my window!). I am in the city now and miss seeing the bright white flowers in the spring and the heavy berry bundles in fall... just writing that is convincing me to go foraging :) Sustainable Eats — how do you make lacto-fermented beets? they sound delicious. just add salt and water and wait (like sauerkraut)? do you typically grate the beets or dice them?
