I am looking for a recipe for Persimmon meatloaf. I have had this at the RedRock Canyon Grille in OKC, OK but recipe is unavailable. Do you happen to know of a good recipe using the persimmons for meatloaf? Thanks

[...] I decided that this was the week that I would cook the turnips that had for so long been staring at me from the kitchen counter. Saturday passed, then Sunday, then Monday, then Tuesday… yet they remained on the counter. Finally on Wednesday I succumbed to their powers and made them into a impromptu mash with my newest and favorite kitchen gadget, a food mill (also very useful for making Persimmon Applesauce).
Just wanted to say hello and that I'm glad to find your site. I came across it while looking for a roasted root vegetable recipe. I too have a passion for eating locally and in season and spend my days (and nights) in the kitchen trying to make good food with local stuff. Tonight I made a parsnip, turnip, sw. pot, swiss chard, barley soup that turned out pretty good...even my 16 mth old son ate some! Anyway, thanks for the inspiration...sometimes I feel all alone in the world of eating/cooking as social and environmental justice/activism. Your site was just the kick in the pants that I needed.
happy eating!
ps. I'm in delaware.
