1 large yellow onion, finely chopped

Desperado Onion Soup
4-6 T. butter
2.5 lbs yellow onions, thinly sliced
1/4 t. black pepper
2 t. fresh thyme, chopped
5 c. beef broth
2-4 oz gruyere, finely shredded
1-2 handfuls croutons (optional)
